Jennifer Stovsky '18 and her mom Shannon are headed to New York to
compete in the second annual AIRBAKE Extreme Cookie Challenge
"Cookie-Off" at the famous toy store FAO Schwarz.
The
mother-daughter team was selected as a finalist in AIRBAKE's cookie
contest with a recipie for "Not Your Mother's Oatmeal Cookies,"
inspired by bread pudding the two ate at a Bainbridge restaurant.
Jennifer
and Shannon are competing for a grand prize of a $10,000 US Savings
Bond and the title of National Cookie Champions. The runners-up will
each receive a $1,000 savings bond.
Here's the recipie:
Not Your Mother's Oatmeal Cookies

1 C unsalted butter, softened
1/2 C granulated sugar
1 C firmly packed brown sugar
2 large eggs
1/2 t pure vanilla extract
1-1/2 C all-purpose flour
2 C quick cooking oats
1 t baking soda
1/2 salt
1 C dried cherries (if large, snip in half)
1 C white chocolate chips
1 C chopped pecans, lightly toasted and cooled
1 C English toffee bits (i.e. Heath candy)
Heat oven to 350°. Line two large AirBake baking sheets with parchment paper.
In a bowl, cream butter and sugars until light and fluffy. Add eggs and vanilla to butter mixture and mix just until blended.
In
another bowl, combine flour, oats, baking soda and salt; blend with a
wire whisk. Add flour mixture to butter mixture until just combined.
Add the remaining ingredients and stir with a wooden spoon (dough may
be a little stiff).
Place dough on baking sheets using miniature
ice cream scoop or two teaspoons, leaving two inches between each
cookie. Bake 10-13 minutes or until slightly browned. Allow cookies to
cool on pan for 2-3 minutes and then remove to wire rack until
completely cool. Makes 24 cookies.
